Saor Project™ is the brainchild of three friends, Christian (chef), Gianluca Zago (marketing/sales) and Alessandra Manias (chef/design). Their passion and understanding of Italy’s food and wine culture inspired the Saor Project and they are now dedicated to sharing it with their new home, Los Angeles.
What does it mean?
The name SAOR was stumbled upon one night at the dinner table. We talked about the regional recipes that unite us, Friuli Venezia Giulia and Veneto, and found “sardine in saor” (sweet and sour sardines). SAOR was the preservation method used by the Venetian fishermen who had the need to keep food on board for extended periods of time. Sardines, after having been fried were kept in a jar layered with sweat onions and vinegar to produce a long lasting preservation. The base of a saor is therefore a combination of onions and vinegar. It is often used in Venetian cuisine to accompany dishes like the famous liver “alla veneziana”.
What does our project involve?
Saor Project™ aims to disclose the origin of ancient Italian culture to a wider audience, in this case to the greater Los Angeles area. The real Italian traditions are based on a peasant culture and poor food now becoming very hard to find with the introduction of modern commodities. We cook dishes from a variety of Italian regions with an extensive and sophisticated knowledge of northeastern dishes. Through private dinners, events and our blog, you can find Italian dishes and traditions that are slowly disappearing but are very important to preserve. Los Angeles county is the place we now call home and the starting point of our project.
Who we are
GIANLUCA ZAGO is a good eater with a deep love of Italian food and culture. He is the head of social media and customer relations and comes from a background in marketing and sales. He believes in the Saor project because he believes in real Italian hospitality. He is happiest when gathered around a table with a few friends, sharing experiences of flavors and memories.
ALESSANDRA MANIAS is an expert in strategic marketing and design with a passionate curiosity for cooking. Her task is to bring the project originality with her unique style, engaging photos and innovative ideas. She collaborates with Gianluca in media management and with Christian in the research of ancient dishes.
